Description

This baked cottage cheese eggs recipe combines protein-rich ingredients with creamy texture and customizable flavor. A healthy, low-carb breakfast that’s easy and satisfying.


Ingredients

1 cup cottage cheese (4% fat recommended)

4 large eggs

1/4 cup grated Parmesan cheese

2 tablespoons fresh chives, chopped

1/2 teaspoon garlic powder

1/4 teaspoon paprika (or smoked paprika)

Salt and freshly ground black pepper to taste

Optional add-ins: 1/4 cup diced bell peppers, 1/4 cup spinach, 2 tbsp sun-dried tomatoes


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Lightly grease a 9-inch pie dish or 8×8-inch baking dish.

  3. Blend cottage cheese in a food processor until smooth.

  4. Whisk eggs in a bowl, then fold in cottage cheese, Parmesan, chives, garlic powder, paprika, salt, and pepper. Add optional ingredients if desired.

  5. Pour into the prepared dish and bake for 15–17 minutes until set.

  6. Let rest for 2–3 minutes, then serve warm.

Notes

  • Can be made in muffin tins—reduce bake time to 12–15 minutes.
  • To reheat: microwave or bake at 350°F until warm.
