Ingredients
Dry Ingredients
- 1 cup all-purpose flour
- ¾ cup whole wheat flour (or sub all-purpose)
- 1 cup rolled oats
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground cardamom
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg
Sugars
- ½ cup brown sugar, packed
- ½ cup granulated sugar
Wet Ingredients
- ½ cup vegetable oil (or melted butter)
- 2 large eggs
- 1 cup milk (or dairy-free alternative)
- 1 tsp vanilla extract
Optional Add-ins
- ½ cup chopped nuts (walnuts or pecans) or raisins
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper to prevent sticking and ensure easy removal.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, whole wheat flour, rolled oats, baking powder, baking soda, salt, and all chai spices (cinnamon, ginger, cardamom, cloves, and nutmeg) until evenly combined.
- Combine Wet Ingredients: In a large bowl, whisk the brown sugar, granulated sugar, vegetable oil (or melted butter), eggs, milk, and vanilla extract until the mixture is smooth and well blended.
- Incorporate Dry Into Wet: Gently fold the dry mixture into the wet ingredients just until combined. Avoid overmixing to keep the bread tender.
- Add Optional Mix-ins: Stir in nuts or raisins if using, distributing them evenly throughout the batter.
- Transfer Batter to Pan: Pour the batter into the prepared loaf pan and smooth the top for even baking.
- Bake Bread: Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean, signaling that the bread is fully cooked.
- Cool Bread: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
- For extra texture and a decorative touch, sprinkle oats and cinnamon sugar on top of the batter before baking.
- Store the bread covered at room temperature for up to 3 days or refrigerate for up to 1 week to maintain freshness.
- This bread freezes well; wrap tightly and freeze for up to 3 months. Thaw at room temperature before serving.
