Description

Ingredients

For the Casserole:

2 tablespoons olive oil

1 lb chicken breasts, diced

3 cups potatoes, peeled and cubed

1 medium onion, chopped

2 garlic cloves, minced

1 cup carrots, sliced

1 cup asparagus, chopped

1 cup peas

1 cup broccoli florets

1 teaspoon dried thyme

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup all-purpose flour

2 cups chicken broth

1 cup milk

1/2 cup grated cheddar cheese


Instructions

Step 1: Preheat and Cook the Chicken

Preheat the oven to 400°F (200°C). Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook for 6-8 minutes until browned and fully cooked through. Set the chicken aside.

Step 2: Sauté the Vegetables

In the same skillet, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent. Add the peeled and cubed potatoes and cook, stirring occasionally, for 5 minutes until the potatoes begin to soften.

Step 3: Add the Remaining Vegetables

Add the sliced carrots, chopped asparagus, peas, and broccoli florets. Stir and cook for another 5 minutes until the vegetables start to tenderize.

Step 4: Make the Sauce

Sprinkle the vegetable mixture with flour, thyme, salt, and black pepper. Stir to coat the vegetables. Gradually add the chicken broth and milk, stirring constantly until the sauce thickens, about 3-4 minutes.

Step 5: Combine and Bake

Return the cooked chicken to the skillet and stir to combine. Transfer everything into a greased 9×13-inch baking dish. Top with grated cheddar cheese and bake in the preheated oven for 20 minutes, or until golden brown and bubbly.

Step 6: Cool and Serve

Let the casserole cool for 5–10 minutes before serving. Scoop and enjoy!
