Peach Filling:
- 8 cups peeled and thinly sliced fresh peaches
- 1/2 cup granulated sugar
- 1/2 cup + 2 tablespoons all-purpose flour, divided
- 1 tablespoon cornstarch
- 2 teaspoons ground cinnamon, divided
- 1/4 teaspoon salt
Oat Topping:
- 3/4 cup packed light brown sugar
- 1/2 cup (1 stick) salted butter, room temperature
- 1 3/4 cup old-fashioned oats
Instructions
- Prep the Peach Filling: Preheat oven to 400°F (200°C) and grease a 9×9-inch baking pan. In a bowl, combine peaches, granulated sugar, 2 tablespoons flour, cornstarch, 1 teaspoon cinnamon, and salt. Pour into the pan.
- Prepare the Oat Topping: In the same bowl, cream together brown sugar, 1/2 cup flour, butter, and remaining cinnamon. Mix in oats until crumbly.
- Assemble and Bake: Sprinkle the oat topping over the peaches. Bake for 20-25 minutes until golden and bubbly.
- Rest and Serve: Let the crisp cool for 10 minutes before serving. Enjoy warm, optionally with ice cream.
Notes
- Substitute frozen peaches if fresh are unavailable—ensure they are thawed and drained.
- Experiment with additions like nuts or different fruits such as blueberries.
- Allow the crisp to cool before serving to set the topping nicely.
