Description

Quick and flavorful chow mein noodles stir-fried with cabbage, celery, and onions in a savory soy-garlic sauce. Better than takeout and ready in under 30 minutes!


Ingredients

For the Chow Mein:

1 lb fresh chow mein noodles

2 cups green cabbage, thinly sliced

1 cup celery, thinly sliced

1 small onion, thinly sliced

2 tbsp vegetable oil

For the Sauce:

2 tbsp regular soy sauce

½ tbsp dark soy sauce

2 tbsp oyster sauce (or vegetarian alternative)

1 tbsp sesame oil

2 garlic cloves, minced

¼ cup chicken stock or cold water

½ tbsp cornstarch


Instructions

  1. Make the Sauce: In a bowl, whisk together all sauce ingredients. Set aside.

  2. Blanch the Noodles: Boil water in a large pot. Blanch noodles for 20–30 seconds until loosened. Drain and set aside—do not rinse.

  3. Cook Veggies: Heat 1 tbsp oil in a large pan or wok. Sauté onions, cabbage, and celery for 1 minute.

  4. Add Noodles & Sauce: Push veggies aside, add the remaining oil, then noodles and sauce. Toss everything together until evenly coated and heated through.

  5. Serve: Remove from heat and enjoy hot!


Notes

  • For extra heat, add chili garlic sauce or red pepper flakes.
  • Substitute fresh noodles with dried ones if needed—just follow cooking instructions.
  • Keeps well for 3–4 days in the fridge, ideal for meal prep.
