Ingredients

For the Mascarpone Cream:

  • 15.87 oz mascarpone cheese
  • 1 teaspoon vanilla extract
  • ½ cup pumpkin puree
  • ⅔ cup granulated sugar
  • ⅓ cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • ¼ teaspoon kosher salt
  • 2 cups heavy cream (cold)

  • 2 cups coffee (espresso or strong coffee)

Instructions

  1. Prepare the Coffee: Brew the espresso or strong coffee and let it cool for a few minutes. Set aside while you prepare the mascarpone cream.
  2. Mix the Mascarpone Cream: In a large mixing bowl, add the mascarpone cheese, brown sugar, granulated sugar, kosher salt, and pumpkin pie spice. Using an electric hand mixer, beat until well combined.
  3. Add the Pumpkin Puree: Stir in the pumpkin puree until fully incorporated into the mascarpone mixture.
  4. Whip the Cream: Add the cold heavy cream to the mascarpone mixture and continue mixing for 3-4 minutes until the filling thickens and becomes creamy.
  5. Assemble the Tiramisu: Dip the ladyfingers quickly (1-2 seconds) in the cooled coffee and arrange them in a single layer in a 13×9 inch baking dish.
  6. Add the Mascarpone Filling: Spread half of the pumpkin mascarpone mixture over the soaked ladyfingers and smooth it out with a spatula. Layer more soaked ladyfingers on top, then pipe the remaining cream mixture over the second layer of ladyfingers.
  7. Chill and Set: Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours to allow the flavors to meld and the ladyfingers to soften.
  8. Top and Serve: Just before serving, dust generously with cocoa powder. Serve.
