Russet Potatoes:

- 1 cup (120 g) mozzarella cheese, grated (or cheddar/pecorino)

Instructions
- Mix Ingredients: In a bowl, mix grated potatoes, cornstarch, salt, pepper, and green onions.
- Add Cheese: Stir in grated cheese.
- Cook Pancakes: Heat oil in a non-stick pan, scoop mixture into pancakes, cook each side until golden and crispy.
- Melt Cheese: Sprinkle cheese on top of pancakes, allow it to melt.
- Garnish and Serve: Garnish with green onions and serve warm.
