- 1 large yellow onion, diced
- 2 large carrots, diced
- 1 stalk celery, diced
- 2 cloves garlic, minced
- ¼ cup all-purpose or gluten-free flour
- ½ tsp smoked paprika
- 3 cups vegetable broth
- 4 cups chopped broccoli
- 2 cups 1% milk
- 4 oz shredded cheddar cheese (approx. 1 cup)
- 1 cup low-fat blended cottage cheese
- Salt & pepper to taste
Instructions
- Sauté Vegetables: In a pot, sauté onion, carrot, and celery in butter for 10 minutes.
- Add Flavor: Stir in garlic, paprika, and flour; cook for 1 minute.
- Cook Broccoli: Add broth and broccoli; simmer until tender (8–9 mins).
- Finish Soup: Pour in milk, then stir in cheddar and blended cottage cheese until creamy.
- Blend and Season: Blend a cup of soup, return it to the pot, and season to taste. Serve hot.

- Frozen broccoli can be used, adjusting cooking times if needed.
- Blending more soup creates a smoother texture.
