Description

Juicy, flavorful chicken thighs marinated in fresh lemongrass, garlic, and a tangy fish sauce-lime marinade, then pan-seared to golden perfection.


Ingredients

1 lb boneless skinless chicken thighs

2 stalks lemongrass, finely chopped

4 cloves garlic, minced

2 shallots, finely chopped

2 tbsp fish sauce

1 tbsp soy sauce

1 tbsp sugar

1 tbsp lime juice

1/4 cup vegetable oil

Fresh cilantro for garnish

Sliced chilies for garnish (optional)


Instructions

  1. Combine lemongrass, garlic, shallots, fish sauce, soy sauce, sugar, and lime juice in a bowl.

  2. Toss chicken in marinade; refrigerate 30 minutes to 2 hours.

  3. Heat oil in skillet; cook chicken 5-6 minutes per side until golden and cooked through.

  4. Rest chicken, slice, garnish with cilantro and chilies. Serve with rice or vegetables.
