Ingredients
Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
Potatoes:
- 1.5 pounds baby potatoes, halved
Additional Ingredients:
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- Fresh parsley for garnish (optional)
Instructions
- Preparation: Wash and halve potatoes; mince garlic.
- Season Chicken: Rub chicken with olive oil and season with Italian seasoning, salt, pepper, and red pepper flakes.
- Layer Ingredients: Layer potatoes in crockpot; place seasoned chicken on top.
- Add Flavor: Sprinkle minced garlic and Parmesan cheese on top of the chicken.
- Cooking: Pour chicken broth over everything. Cook on low for 6-7 hours or high for 3-4 hours until chicken reaches 165°F and potatoes are tender.
- Serve: Garnish with fresh parsley and serve.
Notes
- For extra flavor, brown chicken before slow cooking (optional).
- Add vegetables halfway through cooking for variety.
- Store leftovers in fridge for up to 3 days; reheat with broth to keep moist.
