Ingredients
Eggs:
- 2 large eggs, room temperature
Sugar:
- ½ cup granulated sugar
Onion:
- 1 medium onion, finely chopped
Cornmeal:
- ½ cup gluten-free cornmeal (or corn flour alternative)
Flour:
- ½ cup gluten-free all-purpose flour blend
Salt and Pepper:
- Salt and black pepper to taste
Oil:
- Vegetable or canola oil for frying
Optional:
- dipping sauce (remoulade, honey butter, tartar sauce)
Instructions
- Whisk eggs and sugar until pale and slightly thick. Stir in onions.
- In separate bowl, combine cornmeal, GF flour, salt, and pepper. Fold dry ingredients into wet mixture; rest 5–10 minutes.
- Heat oil to 350–375°F. Fry spoonfuls of batter in small batches until golden (4–6 min).
- Drain on paper towels; serve hot with dipping sauce.
Notes
- Don’t overmix batter for fluffy texture.
- Test oil with a dollop of batter to confirm temperature.
- Use an ice-cream scoop for even portion sizes.
- Air fryer option: spray lightly and air fry at 360°F until golden.
