- Cook the Tortellini: Cook the tortellini according to package instructions. Drain and set aside, reserving a small cup of pasta water.

Stir in gorgonzola cheese and Parmesan cheese. Let the sauce cook for about 3–5 minutes, stirring frequently, until the cheeses are melted and the sauce thickens.
- Combine and Serve: Add the cooked tortellini to the skillet and toss to coat in the creamy sauce. Adjust consistency with pasta water if needed. Season with salt, pepper, and olive oil. Serve hot, garnished with parsley.
