Ground Beef and Potatoes is a hearty, comforting dish that combines flavorful ground beef with tender potatoes in a savory, satisfying meal. This simple and versatile recipe can be made in under an hour and is perfect for meal prep or a quick weeknight dinner.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Ground Beef:

  • 1 lb ground beef

Potatoes:

  • 4 medium potatoes (peeled and diced)

Onion Mixture:

  • 1 small onion (diced)
  • 2 cloves garlic (minced)

Seasonings:

  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin (optional)
  • Salt and pepper to taste

Other:

  • 1 cup beef broth (or water)
  • 2 tablespoons olive oil (or butter)
  • Fresh parsley or cilantro (for garnish, optional)

Instructions

  1. Cook the potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 10-12 minutes until golden and tender. Remove and set aside.
  2. Cook the beef: In the same skillet, add the remaining tablespoon of olive oil. Add the ground beef, cooking and breaking it up until browned, about 6-8 minutes.
  3. Sauté the vegetables: Add the diced onion and garlic, cooking for an additional 2-3 minutes until the onions are soft and translucent.
  4. Add seasonings: Stir in oregano, paprika, cumin (if using), salt, and pepper. Cook for 1 minute to release the fragrance of the spices.
  5. Combine the potatoes: Return the cooked potatoes to the skillet. Add the beef broth (or water) and stir well. Simmer for 5-7 minutes, allowing the flavors to meld.
  6. Serve: Adjust seasoning with salt and pepper as needed. Garnish with fresh parsley or cilantro. Serve hot as a standalone meal or with a side salad.

Notes

  • For extra flavor, add vegetables like bell peppers, peas, or carrots.
  • For a spicy version, add red pepper flakes or jalapeños.
  • If desired, sprinkle shredded cheese over the top before serving for a cheesy twist.
