Ingredients
Ground Beef Enchiladas:
- 1 lb lean ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 8 flour or corn tortillas
- 2 cups enchilada sauce (store-bought or homemade)
- 2 cups shredded cheddar or Monterey Jack cheese
- Sour cream (for serving)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
- In a skillet, cook ground beef and onion over medium heat until browned and soft, about 5–7 minutes. Add garlic, cumin, and chili powder. Cook 1 more minute.
- Spoon beef mixture into tortillas, roll, and place seam-side down in the baking dish.
- Pour enchilada sauce over the top and sprinkle with cheese.
- Bake for 20–25 minutes until bubbly and golden.
- Serve with sour cream or your favorite toppings.
Notes
- For extra spice, add hot sauce or jalapeños.
- Can be made ahead and refrigerated or frozen.
