Ingredients

Ground Beef Enchiladas:

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheddar or Monterey Jack cheese
  • Sour cream (for serving)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
  2. In a skillet, cook ground beef and onion over medium heat until browned and soft, about 5–7 minutes. Add garlic, cumin, and chili powder. Cook 1 more minute.
  3. Spoon beef mixture into tortillas, roll, and place seam-side down in the baking dish.
  4. Pour enchilada sauce over the top and sprinkle with cheese.
  5. Bake for 20–25 minutes until bubbly and golden.
  6. Serve with sour cream or your favorite toppings.
