Description

A simple and hearty casserole featuring lean ground beef, sautéed vegetables, rich tomato sauce, and a cheesy breadcrumb topping. Perfect for easy weeknight dinners or family meals.


Ingredients

1.5 lbs lean ground beef

1 large onion, finely chopped

4 cloves garlic, minced

2 medium carrots, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

2 cups tomato sauce

1 can (14.5 oz) diced tomatoes, drained

1 cup beef broth

2 teaspoons Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

1 cup shredded mozzarella or Parmesan cheese

½ cup breadcrumbs (optional)


Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion for 3-4 minutes until translucent. Add garlic, carrots, and bell peppers; cook 5-7 minutes.

  2. Push veggies to one side. Add ground beef, cook until browned, breaking apart, 5-7 minutes. Drain fat if needed.

  3. Stir in tomato sauce, diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Simmer 10 minutes.

  4. Preheat oven to 375°F (190°C). Pour mixture into casserole dish. Top with cheese and breadcrumbs if using.

  5. Bake 25-30 minutes until cheese is bubbly and golden. Cool 5-10 minutes before serving.

Notes

  • Drain canned tomatoes well to avoid excess moisture.
  • For gluten-free, omit breadcrumbs or use gluten-free alternative.
