Ingredients
12 oz (340 g) pasta (spaghetti or your preferred type)
1 cup (250 g) ricotta cheese
Zest and juice of 1 lemon
2 tablespoons olive oil
2 cups (60 g) fresh spinach, roughly chopped
2 cloves garlic, minced
Salt and black pepper, to taste
Grated Parmesan cheese (optional, for garnish)
Instructions

Cook pasta in salted boiling water until al dente. Reserve ½ cup pasta water and drain.

Heat olive oil in a skillet, sauté garlic 1 minute until fragrant.

Add spinach, cook until wilted (2–3 minutes), then remove from heat.

Whisk ricotta, lemon zest, juice, salt, and pepper in a bowl until smooth.

Toss pasta with spinach in skillet, pour ricotta mixture over, and combine, adding pasta water gradually for desired sauce consistency.
