Ingredients

Sausage

  • 1 lb Italian sausage links (mild or hot)

Vegetables & Aromatics

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced

Seasonings & Sauce

  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional)
  • ½ cup crushed tomatoes (or tomato sauce)
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat to prepare for cooking the sausages.
  2. Brown the sausages: Add the Italian sausage links to the skillet and brown them on all sides, cooking for about 5–6 minutes until they develop a nice crust. Remove the sausages from the pan and set aside.
  3. Sauté vegetables: In the same pan, add the sliced onion and the three colored bell peppers. Sauté the vegetables for about 5 minutes until they soften and become fragrant.
  4. Add garlic and herbs: Stir in the minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Cook these aromatics for approximately 1 minute to release their flavors.
  5. Add tomatoes and seasonings: Pour in the crushed tomatoes and season with salt and black pepper to taste. Stir well to combine everything.
  6. Simmer with sausages: Return the browned sausages to the skillet. Cover the pan and let it simmer gently for 15–20 minutes until the sausages are fully cooked through and flavors meld together.
  7. Garnish and serve: Finish by garnishing the dish with fresh parsley. Serve hot, either on its own or accompanied by pasta, rice, or crusty Italian bread.
