Ingredients
Sausage
- 1 lb Italian sausage links (mild or hot)
Vegetables & Aromatics
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
Seasonings & Sauce
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp red pepper flakes (optional)
- ½ cup crushed tomatoes (or tomato sauce)
- Salt and black pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat olive oil: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat to prepare for cooking the sausages.
- Brown the sausages: Add the Italian sausage links to the skillet and brown them on all sides, cooking for about 5–6 minutes until they develop a nice crust. Remove the sausages from the pan and set aside.
- Sauté vegetables: In the same pan, add the sliced onion and the three colored bell peppers. Sauté the vegetables for about 5 minutes until they soften and become fragrant.
- Add garlic and herbs: Stir in the minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Cook these aromatics for approximately 1 minute to release their flavors.
- Add tomatoes and seasonings: Pour in the crushed tomatoes and season with salt and black pepper to taste. Stir well to combine everything.
- Simmer with sausages: Return the browned sausages to the skillet. Cover the pan and let it simmer gently for 15–20 minutes until the sausages are fully cooked through and flavors meld together.
- Garnish and serve: Finish by garnishing the dish with fresh parsley. Serve hot, either on its own or accompanied by pasta, rice, or crusty Italian bread.
