Quick & Easy Huevos Rancheros is a delicious and flavorful Mexican dish made with crispy tortillas, sunny-side-up eggs, and salsa. It’s customizable, easy to make, and perfect for breakfast, brunch, or dinner.

  • Total Time: 15 minutes
  • Yield: 2 servings

Ingredients

Corn Tortillas

  • 2 corn tortillas

Eggs

  • 2 large eggs

Oil

  • 1 tablespoon olive oil or vegetable oil

Salsa

  • 1/2 cup salsa (mild or spicy, based on preference)

Cheese (optional)

  • 1/4 cup shredded cheese

Cilantro (optional)

  • 1 tablespoon fresh cilantro, chopped

Avocado (optional)

  • 1/4 avocado, sliced

Toppings (optional)

  • Sour cream or Greek yogurt
  • Lime wedges

Instructions

  1. Prepare the tortillas: Heat a non-stick skillet over medium heat. Cook the corn tortillas for 1-2 minutes on each side until golden and crispy. Set aside.
  2. Fry the eggs: In the same skillet, add oil and cook the eggs sunny side up or to your desired doneness. Season with salt and pepper.
  3. Warm the salsa: Heat the salsa in a saucepan or microwave until warm.
  4. Assemble the dish: Place each crispy tortilla on a plate. Top with a fried egg and spoon warm salsa over it. Add shredded cheese if desired.
  5. Add toppings: Garnish with cilantro, avocado slices, sour cream or Greek yogurt, and lime wedges.
  6. Serve: Enjoy your Huevos Rancheros immediately with a side of beans, rice, or simply on its own!

Notes

  • Cheese options: You can use cheddar, Monterey Jack, crumbled queso fresco, or cotija for the cheese topping.
  • Spicy version: Add jalapeños or chili flakes for more heat.
  • Meat version: Add cooked or grilled chicken for extra protein.
  • Vegetarian: Add sautéed bell peppers or spinach for extra flavor.
