Description

These Roasted Chocolate Cherry Brownies combine the rich, fudgy texture of chocolate brownies with the sweet, tangy flavors of roasted cherries. Ingredients

For the Roasted Cherries:

2 cups cherries, cut in half, washed, and pitted

Sprinkle of sugar

For the Brownie Batter:

1 1/3 cups white granulated sugar

2 large eggs

1 egg yolk

5 tablespoons unsalted butter, melted

1/3 cup canola or vegetable oil

1 teaspoon pure vanilla extract

3/4 cup all-purpose flour

3/4 cup Dutch-process cocoa powder

1 tablespoon cornstarch

1 teaspoon salt

1 cup semi-sweet chocolate chips


Instructions

  1. Roast the Cherries:

    • Preheat your oven to 400°F (200°C).

    • Line a baking sheet with parchment paper and spread the halved cherries evenly over it.

    • Sprinkle a little sugar over the cherries and bake for 10 minutes, until they soften and release their juice. Let them cool.

  2. Prepare the Brownie Batter:

    • Lower the oven temperature to 325°F (165°C).

    • Spray an 8×8-inch baking pan with non-stick spray and line the bottom and two sides with parchment paper, then spray again.

    • In a mixing bowl, sift together the flour, cocoa powder, cornstarch, and salt. Set aside.

    • Using a stand mixer with a whisk attachment, beat together the sugar, eggs, and egg yolk on high speed for 5 minutes, until light and fluffy.

    • While the mixer is running, melt the butter and let it cool slightly. Add the melted butter, oil, and vanilla to the egg mixture, mixing on low speed.

    • Turn off the mixer and gently fold in the sifted dry ingredients using a rubber spatula. Be careful not to deflate the mixture.

  3. Combine the Ingredients:

    • Add half of the roasted cherries to the brownie batter, followed by the chocolate chips. Gently fold everything together.

    • Pour the brownie batter into the prepared pan and spread it out evenly.

  4. Bake the Brownies:

    • Bake for 40-50 minutes. The brownies are done when the edges are set, but the middle is slightly underdone.

    • After baking, top the brownies with the remaining roasted cherries and extra chocolate chips.

    • Let the brownies cool completely in the pan before freezing them for 15 minutes to help them set.

  5. Serve:

    • Once cooled, carefully remove the brownies from the pan and cut them into squares.
