Ingredients
For the Roasted Cherries:
2 cups cherries, cut in half, washed, and pitted
Sprinkle of sugar
For the Brownie Batter:
1 1/3 cups white granulated sugar
2 large eggs
1 egg yolk
5 tablespoons unsalted butter, melted
1/3 cup canola or vegetable oil
1 teaspoon pure vanilla extract
3/4 cup all-purpose flour
3/4 cup Dutch-process cocoa powder
1 tablespoon cornstarch
1 teaspoon salt
1 cup semi-sweet chocolate chips
Instructions

Roast the Cherries:

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper and spread the halved cherries evenly over it.

Sprinkle a little sugar over the cherries and bake for 10 minutes, until they soften and release their juice. Let them cool.

Prepare the Brownie Batter:

Lower the oven temperature to 325°F (165°C).

Spray an 8×8-inch baking pan with non-stick spray and line the bottom and two sides with parchment paper, then spray again.

In a mixing bowl, sift together the flour, cocoa powder, cornstarch, and salt. Set aside.

Using a stand mixer with a whisk attachment, beat together the sugar, eggs, and egg yolk on high speed for 5 minutes, until light and fluffy.

While the mixer is running, melt the butter and let it cool slightly. Add the melted butter, oil, and vanilla to the egg mixture, mixing on low speed.

Turn off the mixer and gently fold in the sifted dry ingredients using a rubber spatula. Be careful not to deflate the mixture.
