Ingredients
Chicken:
- 1 ½ pounds boneless, skinless chicken breasts
Seasoning:
- 2 tablespoons Cajun seasoning
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- Salt and pepper, to taste
Vegetables:
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- ½ yellow onion, sliced
Broth and Cheese:
- 3 cups low-sodium chicken broth
- 8 ounces cream cheese, cubed
- 1 cup shredded Parmesan cheese
Pasta:
- 12 ounces penne or rotini pasta
- Optional garnish: fresh parsley, extra Parmesan, crushed red pepper flakes
Instructions
- Rub chicken with Cajun seasoning, garlic powder, paprika, salt, and pepper. (Optional: marinate 15-20 minutes).
- Remove chicken, shred, return to slow cooker.
- Add cream cheese and Parmesan, stir until melted and creamy. Cook an additional 10–15 minutes.
- Cook pasta separately until al dente, drain. Stir pasta into slow cooker mixture.
- Serve hot, garnished as desired.
Place chicken, sliced peppers, onion, and broth into slow cooker. Cook on low 6–7 hours or high 3–4 hours.
Notes
- For more heat, increase Cajun seasoning or add crushed red pepper flakes.
- Use chicken thighs for juicier meat.
- Cook pasta separately to avoid mushiness.
