Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper to ensure easy removal of the bread after baking.
- Mix Dry Ingredients: In a medium bowl, whisk together all-purpose flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg, ground cloves, and ground ginger until evenly combined.
- Mix Wet Ingredients: In a large bowl, whisk the mashed cooked sweet potato, vegetable oil (or melted butter), brown sugar, granulated sugar, eggs, vanilla extract, and milk (or buttermilk) until the mixture is smooth and homogenous.
- Combine Mixtures: Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix as this can result in a dense bread.
- Add Nuts (Optional): Stir in chopped pecans or walnuts if desired, for added texture and flavor.
- Pour Batter and Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 55 to 65 minutes or until a toothpick inserted into the center comes out clean.
- Cool: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
Notes
- Roast or boil sweet potatoes ahead of time, then mash and cool before using to save preparation time.
- For extra sweetness and a crunchy topping, sprinkle cinnamon sugar over the batter before baking.
- This bread freezes well for up to 3 months when tightly wrapped. Thaw before serving.
