Description

These Spiced Sweet Potato & Ground Beef Power Bowls are packed with protein, complex carbs, and flavor. Topped with avocado, cottage cheese, and hot honey for a nourishing, bold, and balanced meal.


Ingredients

1 lb lean ground beef (93%)

2 medium sweet potatoes, peeled and diced

1 avocado, sliced

1 cup cottage cheese

1 yellow onion, diced

2 tbsp olive oil

1 taco seasoning packet (or 2 tbsp homemade)

2 tbsp hot honey

½ tsp paprika

½ tsp garlic powder

¼ tsp cinnamon

Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F. Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 40–45 minutes, stirring halfway.

  2. In a skillet, heat 1 tbsp olive oil. Sauté onion until soft. Add ground beef, season with taco mix, and cook until browned.

  3. In serving bowls, layer roasted sweet potatoes, seasoned beef, sliced avocado, and cottage cheese.

  4. Drizzle with hot honey. Garnish with chopped cilantro, red pepper flakes, or lime if desired.

Notes

  • Sweet potatoes can be roasted in advance for quicker assembly.
  • Adjust heat level by choosing mild or spicy hot honey.
