Ingredients
1 tbsp olive oil
1 lb ground turkey sausage
1 onion, chopped
3 cloves garlic, minced
4 cups chicken broth
2 cups water
8 oz lasagna noodles, broken
1 cup heavy cream
1 cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and pepper, to taste
2 cups fresh spinach
1 cup ricotta cheese (optional, per bowl)
Fresh parsley, for garnish
Instructions

Brown sausage, onion, and garlic in oil over medium heat.

Add broth and water; bring to simmer.

Add broken noodles and cook until tender.

Stir in cream, Parmesan, and seasoning; season with salt and pepper.

Add spinach; stir until wilted.

Serve hot with ricotta and parsley garnish.

- Substitute beef or plant-based sausage if desired.
